I’m not sure there could be a heartier, more warming soup than this one. This filling concoction, so substantial it’s bordering on stew territory, is perfect for these midwinter days: filling, comforting, and packed with goodness to help balance out all those mince pies and glasses of prosecco.
Hello, and a rather belated happy new year! Sorry it’s been quiet on the blog front for the past few weeks. January was a bit of a whirlwind of changes at work, getting to grips with driving lessons (yup, learning for the first time aged 29…!), and wedding venue hunting (James and I got engaged over Christmas, yay!). Here it is: the final part in my trilogy of fabulous, fresh vegetable dishes. Kale has gained a reputation in recent years for being a bit ‘worthy’ – but there’s nothing of the #eatclean movement about this recipe. It’s a crunchy, salty, garlicky pile of joy which evokes those foil tubs of crispy ‘seaweed’ you get from the Chinese takeaway.

There’s no getting around it: this isn’t the prettiest dish. It looks mushy and a bit beige. But, like some of the best meals, it’s comforting, warming, wholesome and satisfying, not to mention quick and easy to prepare with a 5-step recipe. Enjoy this dhal served with rice – short grain brown rice is my current favourite – or a soft, pillowy naan.
